You know those two pieces of bread on both ends of your sandwich loaf? Does anyone in your family eat those? In our house, I think I’m the only one who does, and I only do it because I feel it’s such a waste to throw it away. Today I’m sharing with you a recipe for Tuna Patties that makes use of this specific part of your sandwich loaf. Well, the original recipe said to use white bread, but this slight modification, I think, is a better alternative. In this way, you won’t be throwing out any bread at all.
I make Tuna Patties on non-meat days–one day a week, I serve up a dish that’s not made up of chicken, pork or beef. So it’s either a vegetable or fish dish, which actually, can be challenging to do, since the girls are quite picky about food. But the girls have so far liked Tuna Patties (let’s cross fingers that they continue to like it for a longer time).
I usually serve Tuna Patties with an accompanying soup so that our meal is not quite too dry. We eat this with rice, but I’m fine if the girls eat this on its’ own. The bread already provides carbohydrates. You can also eat this is a snack. It stores well on the fridge, you can just heat it up in the microwave for a few seconds, or a few minutes on the oven.
Ingredients
2 cans tuna
2 tsp Dijon mustard (or American Honey Mustard)
1/2 cup bread (the ends of the sandwich loaf), torn into small pieces
1 tsp lemon juice
1 Tbsp liquid from the tuna can
Half an onion, finely chopped (I prefer the white medium-sized ones)
1/2 courgette, grated
1/2 carrots, grated
1 egg
2 Tbsp olive oil
1/2 tsp butter
2 Tbsp chopped parsley (optional)
A dash of salt and pepper
Method:
- Drain the tuna. Save some of the liquid from the cans.
2. Mix tuna, bread, lemon juice, liquid from the tuna, onions, salt, pepper.
3. Taste the mixture to see if it needs more seasoning to your taste. If you’re happy with it, add the egg.
4. Form the mixture into patties.
5. Place onto a wax paper lined tray and chill for an hour. Chilling makes the patties stay together when cooking.
6. Heat the oil and butter in a frying pan.
7. Place the patties and fry for about 3-4 minutes on each side.
8. Serve and Enjoy.
Notes:
- You can also add a few drops of Tabasco sauce to the mixture for a bit of a kick. I don’t do that because, kids.
- This can be dipped into tartare sauce or just plain mayonnaise.
- The carrots and courgette can be removed, but since I’m making it for the kids, it’s to add a healthier element to the dish.
