Sharing with you this really easy-to-make recipe for Quinoa and Corn Salad. It is one of my favourite salads because it takes a only a few minutes to make, keeps well in the ref for several days, and tastes so GOOD! Did you know that quinoa is one of the healthiest foods in the world? All the more reason to try out this recipe!

I usually make a big bowl of this salad and finish it over a day or two. I also serve this when we have parties at home, and very little is left at the end. The quinoa and corn plus the dressing really taste great together.

Method for quinoa and corn salad

  1. Wash and cook quinoa and brown rice according to package instructions.
  2. Once quinoa is cooked, transfer to a bowl and add in: one can of kernel corn, sliced olives, chopped cucumber and sliced capsicums (bell pepper).
  3. For the dressing, mix in 2 TBSP soy sauce, 1 TBSP sesame oil, 1 tsp brown sugar, a dash of lemon juice. Pour into the salad bowl and mix everything!

*Some more options: The salad is great as it is, you can also add in some chopped onions, chopped tomatoes (I usually add tomatoes just right before I eat). For a little zing, add in some pepper flakes. It also goes well with grilled chicken or any other meat you may have.

Some people prefer a warm salad, others like it a little cold. Luckily this quinoa and corn salad caters for both tastes. Eat it straight out from the ref or heat it up in the microwave. Either way, it will taste great!

I hope you try this quinoa and corn salad. It’s great to eat on its own, or as a side dish when you have those barbecue parties (for grilled pork, beef or chicken). It’s also great to bring to work for lunch and for those days when you just can’t be bothered to cook dinner. Enjoy!
