These days, I don’t have that much energy to stay too long in the kitchen. I just get tired very easily, and so whenever I’m there, I prepare food that I can store and eat anytime hunger strikes (and believe me, it strikes ALL the time!). This strawberry pancake muffin recipe is so easy to make, and you can keep it in an air-tight container, and then re-heat in your oven. So you can have it any time of day.

Personally, I have it as a mid-morning snack at the office, and I bring a couple more for my afternoon snack too.

Easy Breakfast or Snack!

How to make it? Easy as 1-2-3:

  1. Place chopped strawberries in muffin cups.
  2. Pour pancake mix over the strawberries (Follow directions in the pancake mix box).
  3. Place in oven at 350 degress for about 8-10 minutes.

And voila! You’ve got yourself some nice pancake muffins! You can use any other fruit instead of strawberries. I’ve previously tried blueberries and they were good too.
